Ingredients

  • 100 grams flour Type 405
  • 2 eggs
  • 250 milliliters fresh milk
  • 50 grams unsalted butter
  • 300 grams vanilla yogurt
  • 125 milliliters berry sauce
  • 1 tbsp sugar
  • Salt
  • 1 tsp powdered sugar
  • 20 grams lemon balm (for garnish)

Preparation

    Mix flour, eggs, milk, sugar, and salt into a smooth batter and let it rest for at least 20 minutes. Heat fat in a large pan. Then, carefully pour the batter with a half-filled ladle, thinly and widely, into the pan. Subsequently, bake for 2-3 minutes over medium heat until golden brown.

    Spread vanilla yogurt on one half of the crêpe, then fold the crêpe into a cone and pour the berry sauce over it. Finally, dust everything with powdered sugar and garnish with lemon balm, then serve.
Tip
If you want a fluffy crêpe, simply replace part of the milk with a splash of mineral water.
