  • 100 grams Flour Type 405
  • 2 eggs
  • 250 milliliters Fresh Milk
  • 125 milliliters Berry Sauce
  • 50 grams Unsalted Butter
  • 300 grams Vanilla Yogurt
  • 1 tbsp Sugar
  • 1 tsp Powdered Sugar
  • Salt
  • 20 grams Lemon Balm (for garnish)

Preparation

    Mix flour, eggs, milk, sugar, and salt into a smooth batter and let it rest for at least 20 minutes. Heat fat in a large pan. Then carefully pour the batter, using a half-filled ladle, thinly and broadly into the pan. Subsequently, bake for 2-3 minutes over medium heat until golden brown.

    Spread vanilla yogurt on one half of the crêpe, then fold the crêpe into a cone and pour the berry sauce over it. Finally, dust everything with powdered sugar and garnish with lemon balm before serving.
Tip
If you want a fluffy crêpe, simply replace part of the milk with a splash of mineral water.
