Ingredients

  • 120 g unsweetened almond milk
  • 45 g fine rolled oats
  • 100 g Skyr or Greek yogurt
  • 120 g mango (fresh and freeze-dried)
  • 1 tbsp chia seeds
  • 1 tbsp shredded coconut
  • 1 tbsp maple syrup

For Serving

  • fresh blueberries for serving

Preparation

    Place the almond milk, rolled oats, Skyr, 80 g fresh mango, 40 g freeze-dried mango, chia seeds, shredded coconut, and maple syrup into a blender. Blend everything into a smooth, creamy mixture. The consistency should be thick and smooth. If the mixture is too thick, add another splash of almond milk; if it's too thin, stir in another tablespoon of rolled oats.

    Pour the mixture into glasses or bowls and let it soak, covered, in the refrigerator overnight (or for at least 4 hours). Before serving, garnish with fresh blueberries, some shredded coconut, and additional mango pieces if desired.
Tip
For an extra protein-rich version, you can also blend in a scoop of protein powder (vanilla). If you prefer it less sweet, simply omit the maple syrup – mango often provides enough natural sweetness on its own.
