Fig Jam

  • 500 g fresh figs
  • 4 tbsp brown cane sugar
  • 1 piece lemon (juice)
  • ½ tsp ground cinnamon
  • ½ tsp ground ginger
  • 4 pieces whole cloves
  • 1 piece star anise

Serving

  • 4 pieces Camembert
  • 1 handful roasted & salted pistachios

Preparation of the Jam

    Wash the figs and cut them into small pieces with their skin (set aside 2-3 figs for decoration). Place the fig pieces together with the sugar, lemon juice, and spices (cinnamon, ginger, cloves, star anise) in a pot.

    Simmer over low heat for 12–15 minutes until the figs are soft and fall apart. Remove the whole spices (cloves and star anise) and purée the mixture until smooth. Let it cool in the refrigerator.

Arrangement

    Cut the Camembert lengthwise and spread with the cooled jam. Place the top half back on and cut the cheese into triangles.

    Sprinkle with chopped pistachios and garnish with the remaining fig wedges. The jam will keep in the refrigerator for 5-7 days.
Tip
The jam also tastes excellent with other cheeses such as goat cheese or strong mountain cheese.
