Das verschleierte Bauernmädchen ist ein traditionsreiches norddeutsches Schichtdessert: Fruchtiges Apfelkompott mit feiner Zimtnote trifft auf knusprig in Butter gerösteten Pumpernickel und eine zarte Vanille-Sahnehaube.
Preparation method
Prepare the apple compote
Peel, quarter, core, and cut the apples into small cubes. Halve the lemon and squeeze out the juice.
Place the diced apples in a pot with the lemon juice, 25 g sugar, 1 packet (8 g) vanilla sugar, and 1/2 tsp cinnamon. Cover and simmer gently over medium heat for about 8–10 minutes until the apples are tender but still have some bite. Then let cool completely.
Toast the crispy pumpernickel
Crumble the pumpernickel into fine crumbs using your fingers or a blender.
Chef's tip
For an even more delicate veil, you can fold fresh sour cream or quark into half of the whipped cream.
The dessert is ideal for making ahead: the compote and crumbs can be prepared the day before. Layered fresh, the pumpernickel stays especially crispy.
