- 500 g apricots (fresh or frozen)
- 1 tsp vanilla extract or the seeds of a vanilla pod
- 80 g chicory syrup (or agave nectar)
- Fresh mint for garnish
For the sorbet, we use well-ripened fruits. Wash the apricots, pit them, and cut them into eighths. Place the fruit pieces in a freezer bag and freeze completely in the freezer. (Tip: You can also use pre-frozen apricots directly).
Place the frozen apricots together with the vanilla extract and chicory syrup in a blender. Blend everything until smooth and creamy. If the mixture is too tart, simply add a little more syrup to taste.
Serve the sorbet immediately in bowls, garnish with fresh mint, and enjoy right away.
Chef's tip
If you don't have chicory syrup on hand, agave nectar or maple syrup makes an excellent alternative.
For an extra creamy texture, you can add a tablespoon of yogurt or a plant-based alternative.
