Peel the apples and remove the core with an apple corer. Then cut into approx. 1 cm thick rings. Halve and squeeze the lemon, and immediately drizzle the apple rings with the fresh lemon juice so they do not turn brown.
Separate the eggs. In a bowl, whisk the egg yolks with wheat flour, whole milk, vanilla sugar, and a pinch of salt to form a smooth batter. Let the batter rest for approx. 10 minutes.
Whip the egg whites until stiff in a separate clean bowl. Then gently fold the beaten egg whites into the batter with a spatula – this makes the coating wonderfully light and airy.
Chef's tip
For a particularly crispy batter, you can stir a small splash of sparkling mineral water or light beer into the batter.
Tart, flavorful apple varieties like Boskoop or Braeburn pair perfectly with the sweet cinnamon-sugar crust.
