Peel the apples and cleanly core them using an apple corer. Next, slice the apples crosswise into rings about 1 cm thick and immediately drizzle with 2 tbsp lemon juice to prevent them from browning.
Separate the eggs for the batter. Whisk the egg yolks with 200 g wheat flour, 150 ml whole milk, 30 g sugar, 8 g vanilla sugar, and 1 pinch of fine table salt until smooth and lump-free. Let the batter rest for 10 minutes, then stir in 50 ml sparkling mineral water.
In a separate clean bowl, whip the egg whites until stiff and gently fold into the batter. The beaten egg whites, together with the sparkling mineral water, ensure an exceptionally light and crispy coating.
Chef's tip
Firm, tart apple varieties such as Boskoop, Elstar, Cox Orange, or Braeburn are particularly suitable, as their fruity-tart flavor harmonizes perfectly with the sweet crispy batter.
Serving tip: Traditionally, the warm apple fritters taste delicious on their own or served with a scoop of Bourbon vanilla ice cream or fine vanilla sauce.
