  • 100 g fine oats
  • 2 tsp chia seeds
  • 1 tsp vanilla extract
  • 200 ml low-fat milk
  • 100 g banana
  • 1 tbsp liquid honey
  • 250 ml still water

Combine the oats, chia seeds, vanilla extract, 200 ml milk, and 250 ml water in a medium saucepan. Cook the mixture over medium heat for about 9–10 minutes, stirring occasionally, until the porridge reaches the desired creamy consistency. Remove the saucepan from the heat, cover it with a lid, and let the oatmeal steep for another 2–3 minutes.

Meanwhile, heat a non-stick pan over medium heat. Peel the banana, slice it lengthwise, and then halve the pieces crosswise to create 4 parts. Place the banana pieces in the pan, drizzle them with honey, and fry them for 1–2 minutes on each side until golden brown and caramelized.

Divide the prepared oatmeal into two bowls and serve each portion with the warm, caramelized banana pieces.

Chef's tip

Alternatively, instead of using a pan, you can caramelize the bananas in the oven: Bake them at 215–220 °C for about 8–9 minutes.
