Preparation method

First, preheat the waffle iron.

Place the cooked jasmine rice, 3 of the eggs, and the whole spelt flour into a tall container and blend until smooth with an immersion blender. Fill the waffle iron with the batter and bake for approx. 5 minutes until 4 waffles (approx. 7x7 cm) are formed.

Meanwhile, carefully mix the lamb's lettuce in a bowl with salt, pepper, chili flakes, and lemon juice. Set aside.

Chef's tip

For an extra crispy touch, you can briefly toast the rice waffles in a toaster after baking.
