
Fresh Bulgur Salad with Feta and Mint

Preparation method
First, bring about 500 ml of salted water to a boil in a large pot over medium heat. Once the water boils, add the bulgur and cook for about 15–16 minutes over medium heat until soft.
Meanwhile, prepare the vegetables: wash the bell pepper and cucumber and cut them into small cubes. Peel and finely chop the shallots. Put everything into a large bowl.
Drain the cooked bulgur through a fine sieve. Briefly rinse under cold running water, drain well, and then add to the vegetables in the bowl.
Chef's tip
For an even more intense flavor, you can cook the bulgur in vegetable broth instead of water. The salad tastes even better the next day after it has steeped well!
