Ingredients
- 40 g Cheddar (coarsely grated)
- 60 g Gouda (coarsely grated)
- 1⁄2 small yellow onion (approx. 25 g)
- 5 g fresh parsley (or cilantro)
- 1 medium tomato (approx. 100 g)
- 2 wheat tortillas (Ø approx. 24 cm)
- 150 g cooked ground beef
- 60 g frozen corn (thawed)
- 1 pinch salt
Preparation
- 1First, prepare the cheese mixture: In a small bowl, combine both coarsely grated cheeses.
- 2Peel the onion and finely chop it together with the parsley. Dice the tomato into small cubes. Then, put everything into another bowl, season with salt, and mix well.
- 3Heat a large pan (min. Ø 24 cm). Place one tortilla in it and spread half of the minced meat and half of the cheese mixture on top. (Tip: If you don't have pre-cooked minced meat, you can vigorously fry 180 g fresh ground beef in 1 tbsp oil for 5–8 minutes and season with salt and pepper). While the cheese melts, add half of the corn and the tomato mixture. Fold the tortilla in half and fry for approx. 20–30 seconds over medium heat until golden brown. Flip and fry for another 20–30 seconds on the other side until the cheese is completely melted. Repeat the process with the second tortilla.
- 4Cut the finished quesadillas into triangles and serve immediately.
