  • 300 g cucumber
  • 200 g Greek yogurt 10% fat
  • 1 clove fresh garlic
  • 1 tbsp fresh dill bunch
  • 1 tbsp lemon juice 100% direct juice
  • 3 tbsp extra virgin olive oil
  • 1 tsp fine table salt

Peel the garlic, halve it lengthwise, and remove the hard germ. Then finely chop the garlic.

Cut off the ends of the cucumber and halve it lengthwise. Scrape out the seeds with a spoon. Coarsely grate the cucumber, place it in a sieve, and sprinkle with salt over a bowl. Stir and let sit for 10 minutes to allow the cucumber to release water.

Squeeze the drained cucumber well and mix in a bowl with yogurt, garlic, finely chopped dill, lemon juice, and olive oil. Let the tzatziki steep in the refrigerator for at least 2 hours. Stir well again before serving.
