Preparation method

Preheat the oven to 180 °C and line a baking dish with baking paper.

Place the cauliflower in the dish, drizzle with olive oil, and sprinkle with paprika powder, rosemary, a pinch of salt, and pepper. Mix well and roast for 35–40 minutes at 180 °C. After half the time, add 100 ml of water to ensure the cauliflower softens and doesn't dry out.

Meanwhile, peel the potatoes and cut them into small cubes. Place them in a pot, cover with cold water, add the second pinch of salt, and cook until soft over medium heat for 15–20 minutes.

Chef's tip

For an extra fine mash, you can use an electric mixer.
