Preparation method
Peel the shallots and garlic. Cut the shallots into half-rings, slice 4 garlic cloves thinly, and press the last clove through a press. Wash the beans and trim the ends. Heat oil and butter in a pan and sauté the shallots until golden brown. Add the sliced garlic and let it brown briefly as well. Remove everything from the pan and set aside.
Cut the bacon into small cubes and fry it vigorously in the pan until crispy. Return the shallots and garlic to the pan and add the green beans. Season with salt and pepper.
Mix honey with white wine vinegar and stir it into the beans along with the chopped herbs and pressed garlic. Sauté everything together for about 5-7 minutes until the beans are cooked but still crisp.
Chef's tip
Make sure to constantly watch the almond flakes while toasting, as they can burn very quickly.
