Dough Preparation
In a bowl, mix flour, cane sugar, baking powder, and a pinch of salt. Add the cold butter in small pieces and work it in with your fingertips or a mixer until a crumbly mixture (like streusel) forms.
In a second bowl, whisk the milk with the egg. Add the mixture to the dry ingredients and combine everything to form a compact dough. Briefly knead the dough on a floured surface.
Roll out the dough to about 1.5 cm thick. Cut out circles of approx. 5 cm diameter with a glass or a cookie cutter.
Chef's tip
For particularly fluffy scones, do not knead the dough for too long – just enough so that it holds together.
The butter should be truly fridge-cold to achieve the typical flaky texture.
