Preparation method
Preheat the oven to 175–180 °C top/bottom heat and line a baking sheet with parchment paper.
Peel the banana, place it in a large bowl, and mash it finely with a fork. Chop the dark chocolate into small pieces and add it to the banana. Add oats, egg, honey, cinnamon, baking soda, vanilla extract, cornstarch, and a pinch of salt, then mix everything thoroughly to form a uniform dough.
Using a spoon, place about 12 dollops of dough onto the prepared baking sheet and flatten them into circles about 5 cm in diameter. Place the baking sheet in the oven and bake the cookies for approx. 20–22 minutes until golden brown.
