First, prepare the simple syrup: Combine water and sugar in a small saucepan and stir over medium heat until the sugar has completely dissolved and the mixture becomes slightly syrupy. Let the syrup cool (it can be stored in the refrigerator for up to a month).

Fill a glass (ideally a silver cup) about halfway with crushed ice. Add 4 cl of the homemade simple syrup, the mint leaves, and 6 cl of Bourbon whiskey.

Stir everything well until the glass frosts on the outside. Top up with more crushed ice and garnish with a fresh mint sprig.
