
Fruit Parfait with Strawberries and Quark

Ingredients overview
- 500 g strawberries (400 g frozen, 100 g fresh)
- 250 g quark (20% fat)
- 60 g oats (gluten-free)
- 20 g almond flakes
- 2 tbsp still water
First, prepare the frozen strawberries (400 g): Place them in a small pot with 2 tablespoons of water and simmer over medium heat for about 10–15 minutes. Then mash the berries with a fork and let the compote cool for 20–30 minutes.
Meanwhile, toast the oats together with the almond flakes in a coated pan without fat over medium heat, stirring constantly, until golden brown (approx. 3–5 minutes).
Now mix half of the cooled strawberry compote into the quark. Prepare three glasses (approx. 200 ml capacity) and layer the ingredients in the following order: strawberry compote, quark mixture, toasted oats with almonds. Repeat the process a second time. Finally, garnish the parfait with the fresh strawberries (100 g) cut into thin slices. Chill in the refrigerator for at least 15 minutes before serving.
Chef's tip
If you want to enjoy the parfait for breakfast, increase the amount of oats to 120 g.
