
Healthy Matcha Pancakes with Banana

- 1 banana
- 100 ml kefir
- 100 g oats
- 2 dates
- 2 g matcha powder
- 1 tbsp coconut oil
Place all ingredients (except a small piece of banana for decoration) in a blender and process until a smooth batter is formed.
Heat a pan over medium heat and add some coconut oil. Don't skimp on the oil, so the pancakes can be easily flipped later. If you don't have coconut oil on hand, you can also use another neutral vegetable oil.
Cook the pancakes in batches for about 2 minutes per side until golden brown. Serve the finished pancakes with the remaining banana slices, a dollop of kefir, and a sprinkle of matcha powder.
Chef's tip
For particularly fluffy pancakes, let the batter rest for about 5 minutes before cooking, so the oats can swell. Serve the pancakes as desired with fresh berries or a drizzle of maple syrup.
