Preheat the oven to 180 °C top/bottom heat and line a baking sheet with baking paper.

Peel the carrot, wash the zucchini, and finely grate both into a large bowl. Rinse the baby spinach under cold water, chop finely, and add to the bowl along with the apple sauce, honey, and egg. Mix everything well.

Add whole wheat flour, rolled oats, baking cocoa, baking powder, and cinnamon and process into a smooth dough. Finally, roughly chop the dark chocolate and fold it into the dough.

Chef's tip

The cookies stay fresh in an airtight container in the refrigerator for about 3-4 days.
