Preparation method

Chop the chocolate and melt it together with the butter in a bowl over a hot water bath. Then let it cool down slightly. Finely chop the lemon balm or crush it with the sugar in a blender.

Put the lemon balm sugar into a bowl, add the eggs, and whisk everything into a light, frothy mixture. Important: The eggs should be at room temperature so that the chocolate-butter mixture does not curdle.

Carefully stir the melted chocolate into the egg mixture. Finally, gently fold in the flour with a spatula.

Chef's tip

Serve the fondant with a scoop of vanilla ice cream or fresh berries for an additional contrast.
